If you've been following me on Twitter you would have noticed that I posted a few tweets about my fussy little eater C.A.P.
I've tried and heard it all. The good and the bad.
C.A.P used to love his fruits and veggies, then one day, out of the blue, he decided they were "dirty" and had no interest in eating them....any of them.
So, after many times outs, plates full of wasted food and even some Mama tears, I decided to turn to Jessica Seinfeld and her magical book.
I totally recommend getting this book if you have a little fussy eater on your hands.
The recipes are simple and easy and every meal provides your kids with one or more servings of veggies. How great is that ?
C.A.P loves "dinner" (Kraft dinner) so I obviously tried this one first.
The one problem I had was that the recipe called for butternut squash or cauliflower and I didn't have either so instead, I used sweet potato and it did the trick !
This is what you'll need :
1 1/2 cups of macaroni
1 tablespoon of olive oil
1 tablespoon on flour
1/2 cup of skim milk
1/2 of sweet potato (or cauliflower or butternut squash) puree
1 1/2 cups of shredded cheddar cheese
4 ounces of no fat cream cheese
1/8 paprika
Sprinkle of salt and pepper
Cook you macaroni on medium until tender.
In a different saucepan mix oil and flour over medium heat until thick but not browned.
Add milk, while stirring often. This mixture will begin to thicken after a few minutes.
Once it's thick add your paprika, salt, pepper, cheese, sweet potato and cream cheese and mix until cheese is completely melted. Forming a sauce.
Stir in Macaroni and serve !
C.A.P loves to coat the stuff in ketchup.
It was a hit !
His belly is full and my mind is at ease.

PS- The book even has a recipe for homemade ketchup using carrots.
